SPAGHETTI WITH CHERRY TOMATOES AND BASIL

IMG_9087Summer is all about the tomatoes. If you’ve been buying them from the farmers market lately, you know how sweet and flavorful they are right now. Here is a simple summer tomato sauce that is perfect for all those beautiful cherry tomatoes. The success of this sauce will be based on the quality of the ingredients you choose and your local farmers market will have everything you need to make this sauce as delicious as it can be.

Serves 2

1/2 box of the spaghetti of your choice
1 pint of cherry tomatoes, any size, shape or color, just taste them before you buy them, stems removed and sliced in half
2 cloves of garlic, peeled and roughly chopped
1/4 yellow or sweet onion, skin removed, roughly chopped
3 tablespoons of good quality olive oil
fresh basil
sea salt

Bring a pot of water to a boil.

While the water is coming to a boil, heat olive oil in a medium sauté pan on medium-low heat. Add the garlic and onion. Cook, stirring frequently, until the onion has softened and become translucent, about 4 minutes. Be careful not to brown the garlic. Season with a pinch of sea salt.

Add the tomatoes and stir to coat. Cook on medium low heat for 5-8 minutes, the tomatoes have started to breakdown just ever so slightly and some of their juice has mixed with the oil.

Remove from the heat and taste. Season with salt if necessary.

Once the water is boiling, season it with sea salt and add the pasta. Cook until al dente.

Once the pasta is finished, scoop it directly from the boiling water into the sauce pan, stirring it to coat. Add a handful of torn basil leaves and stir. If it appears dry for any reason, you can add a little pasta water to help loosen it up. Taste and season with salt if necessary. Serve immediately.
