SUGAR CUBE MELON WITH LIME CILANTRO YOGURT
With this incessant heat, all I have been craving are cool and refreshing dishes filled with bright flavors. Here is a simple, tangy lime yogurt you could pair with any number of fruit combinations. The sugar cube melons have been particularly delicious at the farmers market and their sweetness is a perfect balance with the lime. Serve this at your next summer brunch!
6 small slices of sugar cube melon or your melon of choice, rind removed
1/2 lime, juiced
1/3 cup Saint Benoit Plain Yogurt or your yogurt of choice
1 tablespoon of cilantro, roughly chopped
handful of raspberries gently sliced in half
In a small bowl, whisk together the lime and yogurt. Add a small squeeze of honey, pinch of salt, and a little freshly ground black pepper. Taste. Add the chopped cilantro. Add more honey and seasoning if necessary.
When ready to serve, place 3 melon slices on each plate. Drizzle generously with the lime yogurt and top with raspberries.
