HEIRLOOM TOMATO SALSA WITH AVOCADO
With so many heirloom tomatoes around, a quick salsa is the perfect way to incorporate them into any number of dishes. Featured yesterday on Rip + Tan, this heirloom tomato salsa is delicious as a topping for fish, chicken or paired with your favorite crunchy tortilla chips. Saying goodbye to summer, one bite at a time.
2 medium heirloom tomatoes, cored and diced
1/2 sweet onion, diced fine
1 small clove of garlic, minced
12 cilantro springs, leaves and stems, chopped
1/2 ripe avocado, pit removed and flesh cut into small cubes
Juice of 1 lime
In a medium mixing bowl, combine tomatoes, onion, garlic, cilantro and avocado. Gently fold together. Add the juice of 1 lime and a pinch of sea salt and mix to combine. Taste. Add more lime or salt if necessary.
Let salsa sit for 10 minutes at room temperature before serving so the flavors can meld.
Enjoy with chips, quesadillas, or as a topping on grilled chicken or fish.
