TOAST WITH GOAT CREAM CHEESE, AVOCADO, AND LEMON ZEST

IMG_6299I have been craving toast. Crunchy bites of bread topped with any number of ingredients just hits the spot when you want to have something delicious, without all the work and cleanup. This is my new favorite combination. Toasted sourdough bread topped with goat cream cheese, avocado slices, chives, scallions, parsley, and lemon zest. Finish with a sprinkle of maldon salt,  freshly ground black pepper, and lemon juice. Yum!

IMG_6301TOAST WITH GOAT CHEESE, AVOCADO, AND LEMON ZEST

2 servings

2 pieces of sourdough bread, toasted

goat cream cheese (available at Whole Foods)

1/2 avocado, skin removed, thinly sliced pieces

1 scallion, thinly sliced

1 teaspoon chives, minced

4-5 parsley leaves, minced

1 lemon

olive oil

maldon salt

freshly ground black pepper

IMG_6298Spread a thin layer of goat cream cheese across the top of the bread. Lay 4 slices of avocado across the top. Sprinkle with chives, scallions, and minced fresh parsley.

IMG_6294Sprinkle maldon salt, some freshly ground black pepper, and the zest of 1 lemon across the top.

IMG_6306Finish with a drizzle of extra virgin olive oil and a squeeze of lemon juice.
