WATERMELON SALAD WITH FETA AND BASIL

IMG_5763What is better than cold, sweet, crisp watermelon in the summer? Watermelon with lots of crumbled salty feta on top. This salad is sweet, crunchy, salty, and creamy all at once. Thrown together in less than ten minutes, it’s a perfect dish for hot summer days and nights. The key is all in the ingredients. Use the best you can find.

WATERMELON SALAD WITH FETA AND BASIL

Serves 4

10 oz feta (I used a goat’s milk feta. Find one that you like that is of high quality. It will make all the difference in the salad.)

5 cups watermelon, cut into chunks

3/4 cups small basil leaves

1/4 red onion, sliced paper thin on a mandolin

Maldon salt

freshly cracked black pepper

CHAMPAGNE VINAIGRETTE

1 tablespoon champagne vinegar

3 tablespoons extra virgin olive oil

a little honey

sea salt

black pepper

In a bowl, combine the champagne vinegar, olive oil, and a little drizzle of honey. Whisk until emulsified. Season with salt and pepper to taste.  Toss the onions into the dressing and set aside.

IMG_5748On a large platter or cutting board, arrange the watermelon chunks. Drizzle a little bit of the champagne vinaigrette and onions on top of the watermelon. Sprinkle a little Maldon salt directly on the watermelon. Next, start to generously crumble the feta on top. Scatter some small basil leaves throughout. Drizzle more vinaigrette and onions on top of the feta and basil. Finish with a generous pinch of Maldon salt and freshly cracked black pepper.

If you are doing several layers of watermelon, then make sure to repeat the above for each layer.
