GLUTEN FREE HOMEMADE GRANOLA

I am obsessed with this granola. I am not a fan of dried fruit in cereal and have yet to come across a store bought brand that is gluten free and fruit free. So, I finally decided to make my own. After rummaging through some old recipes and cookbooks, I picked all of the ingredients I personally love and combined them into my Granola. It is perfectly sweet and salty with just the right amount of crunch. Gluten free rolled oats, raw pepitas, and toasted flax seeds give it a wonderful combination of flavors without being overpowering. Enjoy it with a splash of almond milk or some goat’s milk yogurt and berries.

GLUTEN FREE HOMEMADE GRANOLA

2 1/2 cups gluten free rolled oats
1/2 cup unsalted sunflower seeds
1/2 cup raw pepitas
1 1/2 tablespoons flax seeds
1 1/2 tablespoons sesame seeds
1/2 cup slivered or chopped raw almonds
1/2 c raw honey or honey of your choice. (last time i used orange blossom raw honey from the farmers market)
1/2 teaspoon of cinnamon
1/8 teaspoon nutmeg
1 tablespoon vegetable oil
1 tablespoon olive oil
Maldon salt or sea salt

Preheat oven to 300 F degrees.

Combine oats, sunflower seeds, pepitas, flax seeds, sesame seeds, and almonds in a large bowl.

Heat honey and oil in a saucepan over low heat. Stir in cinnamon and nutmeg. Pour warm mixture over the dry ingredients and stir well until coated. Sprinkle a pinch of salt all over the mixture and stir to combine.

Spread the mixture out on a baking sheet and bake for 30 minutes, remove from oven and allow to cool completely before removing from pan. Once cool, use a spatula to break up the granola and store in an air tight container.
